Chili
Ingredients:
- 2 pounds (900g) ground turkey (or ground beef)
- 1 medium onion, chopped
- 1 bell pepper, chopped (any color you prefer)
- 1-2 jalapeƱos, chopped (adjust to your desired level of spiciness)
- 3 cloves garlic, minced
- 2 tablespoons tomato paste
- 1 can (10 ounces) diced tomatoes with green chilies
- 1 can (28 ounces) crushed tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 can (15 ounces) pinto beans, drained and rinsed
- 1 packet (1.25 ounces) chili seasoning mix
- 2 tablespoons canola oil
- Salt and black pepper to taste
- 2 cups beef or vegetable broth
- Optional toppings: shredded cheese, sour cream, chopped green onions, chopped cilantro, or additional sliced jalapeƱos
Instructions:

Heat 1 tablespoon of canola oil in a large pot or Dutch oven over medium-high heat.

Add the chopped onions, bell pepper, and jalapeƱos. Cook for about 3-5 minutes, or until the onions become translucent and the peppers and jalapeƱos start to soften.

Push the cooked onions, peppers, and jalapeƱos to one side of the pot to create space. Add the remaining 1 tablespoon of canola oil to the empty side of the pot.

Pour the chili seasoning mix into the hot oil and let it bloom for about 1-2 minutes. Stir the seasoning mix in the oil to release its flavors.

Add the minced garlic and ground turkey to the pot. Cook the turkey, breaking it up with a spoon, until it's browned and cooked through. Drain any excess fat if necessary.

Stir in the tomato paste and continue to cook for another 1-2 minutes, combining it with the turkey.

Add the diced tomatoes with green chilies (with their juice), crushed tomatoes, kidney beans, and pinto beans to the pot. Mix everything together.

Pour in the beef or vegetable broth and bring the mixture to a simmer.

Reduce the heat to low, cover the pot, and let the chili simmer for about 30-40 minutes, stirring occasionally. If the chili becomes too thick, you can add more broth or water to reach your desired consistency.

Season the chili with salt and black pepper to taste.

Let the chili simmer for an additional 10 minutes, uncovered, to allow the flavors to meld together.

Serve hot in bowls, and garnish with your choice of toppings like shredded cheese, sour cream, chopped green onions, chopped cilantro, or additional sliced jalapeƱos.
