- Thaw Wings if frozen
- Pat Dry
- Add baking powder or corn starch for crispy skin
- Add Heavy Rub
- Let rest in Fridge for 30 mins minimum (dry brine)
- Smoke at 250 until mostly done
- Then Raise smoker temp to 400 until crispy and internal temp is 165
- To Dethaw Wings
- Fill a large bowl with lukewarm water and put the bag of wings in there for ~20mins, do that twice and they'll be thawed.
- go to Costco for wings, 5lbs for $25

- Next Attempt
- Thaw wings earlier
- Pat Dry completely
- Lightly salt and baking powder, then sit in fridge
- Pat dry once more
- Then add rub right before smoking
- Smoke on Higher temp, around 375 (should cook quick)
- Wanna make them sweeter, look into more brown sugar.
