Piperine

First - What is Piperine?​

Piperine - "pih-peh-reen." - is a compound found in black pepper, which is responsible for its pungent flavor.

Why add pepper after searing?​

The flavor compounds in pepper, especially Piperine, will react with various elements that affect and lessen the flavor.

Conclusion​

Add Pepper Either Before, During, or After the cooking process depending how much of the "raw" pepper taste you are wanting. The more you cook with pepper on the food will only lessen its overall flavor.

My Notes​

  • I tested this with a reverse sear steak.
  • I added some light pepper AFTER baking but BEFORE searing
  • Then Added a tiny bit more AFTER before searing
  • This was a good combo. I got a good amount of pepper taste and more of the Piperine pungent flavor.
